Bison ranches are a big thing in Alberta. Huge business and as far as I'm concerned, bison is the best red meat available in the world. I'm having some tonight! This sounds like the kinda strap I need.

Okay, so people do eat Buffaloes. I guess I'm outta the loop, preferring the meat from the North American Bacon. I've never actually seen a Bacon, but I hear they're vicious.

Richter also offers a strap made of beaver tail. I wanna ask, but I can't find a suitable family-friendly way of putting the question.
